Sweet & Spicy Alaskan Umami Sauce

Sweet & Spicy Alaskan Umami Sauce is a super thick and sticky sweet sauce. One of the most unusual sauces we’ve had lately, it doesn’t just pour out of the bottle – you need a knife or spoon to ladle it out.

And it’s worth the trouble.

The Sweet & Spicy Alaskan Umami Hot Sauce lineup

Sweet & Spicy Alaskan Umami Sauce is available in mild, hot and extra hot flavors.

I found out by talking to sauce creator Pamela Turner as to why there is no “Medium” level of sauce. After having launched their Mild and Hot levels, they were inundated with requests for an Extra Hot version. Not willing to re-tool the labels for the Mild and Hot… Extra Hot was launched and the middle child, Medium, was left out.

Mild:

Very sticky, very sweet, very thick. Breakfast syrup sweet. We tried this on chicken tenders as a dipping sauce.

A nice, middle of the road sauce for dipping.

Mild Alaskan Umami Sauce

Mild Alaskan Umami Sauce

“Mild” ingredients: brown sugar, cayenne pepper sauce (cayenne peppers, vinegar, water, salt, garlic powder), vinegar, minced garlic, pure sesame oil, unsulphered molasses, granulated garlic, granulated onion, pepper, sea salt.

Heat Level: Rated 1 out of 5 Stars – Very mild, sweet and sticky. A nice glaze or substitute for pepper jelly. Tame.

Overall Rating: Rated 2.5 out of 5 Stars – It’s pepper jelly good. Great for everyone to try.

Good for: Probably best tossed in warm/hot wings after they’re done cooking. Also a great dip for pretzel sticks or poured onto breakfast sausage.

Hot:

Again, our first test was on chicken tenders as a dipping sauce.

Wow. The best flavor/heat combo of the 3.

A pop of heat in the mouth and up in the nose. When you swallow it, it burns your throat, but quickly subsides.

Hot Alaskan Umami Sauce

Hot Alaskan Umami Sauce

“Hot” ingredients: Brown sugar, cayenne pepper sauce (cayenne peppers, vinegar, water, salt, garlic powder), vinegar, minced garlic, pure sesame oil, cayenne, unsulphered molasses, granulated garlic, granulated onion, pepper, sea salt.

Heat Level: Rated 2 out of 5 Stars – Medium heat and best flavor of the 3. Perfect.

Overall Rating: Rated 4 out of 5 Stars – Our favorite and most flavorful. Recommended.

Good for: Crackers with cream cheese, a wing glaze with some heat or a dip for jalapeño poppers.

Extra Hot:

First of all, it’s indeed extra hot. Darkest red color of the trio. Lots of pepper flakes floating about.

Too hot for my taste as a sweet dipping sauce. Think of this as a thin pepper jelly for the adventurous.

Extra Hot Alaskan Umami Sauce

Extra Hot Alaskan Umami Sauce

“Extra Hot” ingredients: Brown sugar, cayenne pepper sauce (cayenne peppers, vinegar, water, salt, garlic powder), vinegar, cayenne, minced garlic, pure sesame oil, unsulphered molasses, granulated garlic, granulated onion, pepper, sea salt.

Heat Level: Rated 3 out of 5 Stars – Hot with far less sweetness. Hot.

Overall Rating: Rated 1 out of 5 Stars – Hot for hots sake. A little overkill.

Good for: Fire cracker grilled shrimp.

About:

Pam Turner started Alaskan Umami Sauce as a wing sauce.

It really came about because of my own picky taste buds, said Turner. “I never could find a barbecue or other dipping sauce for meats that I liked very much, so I made my own.” I started making this sauce for chicken wings about 20 years ago, although it has been changed quite drastically over the years to what it is now.

The Good Stuff Sweet BBQ Sauce Review

the good stuff bbq sauce on pulled pork

The Good Stuff Sweet BBQ Sauce comes from Hickey Bottom BBQ Sauce Co out of Fenelton, PA. The daughter and mother team of Rebecca McCrea and Mary Ann Pranulis hand bottle this sweet, sticky BBQ sauce, and are currently selling it in a few stores in their local Pennsylvania area, as well as on Amazon.com.

The Good Stuff Sweet BBQ Sauce is a simple, sweet sticky BBQ sauce that makes no qualms about the lack of heat or spiciness… this is not a hot BBQ sauce. Rather it’s a medium thick, sweet sauce that does well at the end of your cook. And it’s the pride and joy of Rebecca McCrea who’s been making it for years, and at the urging of friends and customers, has begun bottling and selling it.

Rooftop Barbeque Competition Style BBQ Sauce Review

Rooftop Barbeque is a team, a competition sauce and now a rub, from the minds of Andy Allen, Kellen Wagoner, Joe Angelone, and Keith Henson of Southern California. Launched in 2009, the Team has competed and won numerous awards.

Speaking of awards, their Rooftop Barbeque Competition Style BBQ Sauce, launched in May of 2011 and featured here, has garnered them awards in almost every category at competitions from chicken, to beef to pork. They continually sell out of their sauce at almost every event. High praise indeed.

We’ve had Rooftop BBQ sauce on chicken, MOINK Balls, and ribs. It never failed to impress.

Rooftop sauce sample

Rooftop is very thick and sticky

As a fan of the sweet, sticky Kansas City style of BBQ, I have to give Andy props for coming up with not just the traditional sweet molasses-based BBQ sauce, but one that adds an extra dimension of flavor by adding butter and vanilla to craft a depth of flavor that most BBQ sauce manufacturers fail to deliver. The first impression out of the bottle is of a thick, somewhat sweet sauce that packs a bit of a heat punch. This sauce is so thick that when cold, you’ll need a knife or spatula to coax it out of the bottle. Once delivered to a warm slab of ribs, hot grilled wings, or fresh-off-the-grill Moink balls, the sauce melts into a perfect sticky glaze that will keep you licking your fingers til you finish that last wonderful bite.

Rooftop on Ribs

Rooftop glazes and sticks to ribs perfectly

There is a level of heat provided by the chipotle powder that may be a little too much for the standard sweet BBQ sauce lovers (aka Sweet Baby Rays), but for those who like a little heat with their ribs/wings/pulled pork, Rooftop is spot-on.

As readers of our blog know, we are not big fans of heat in our BBQ sauce. But Rooftop BBQ has tempered the heat of the chipotle pepper with the addition of butter and vanilla to this sauce. The end result is a deliciously sweet sauce with a warm undertone and a great feel on the tongue.

Rooftop BBQ now also offers a Jalapeno Peach Jam (I love me the peach!) that we have yet to try. And recently, in February of 2012, their competition rub has completely sold out. They’re working on getting more into production as I write this. We’re looking forward to trying these, and any other products that Andy, Kellen, and Rooftop BBQ have in store!

Heat Rating: Rated 3 out of 5 Stars – quite spicy – they’ve reported to us that they get requests to make an even spicier version. Wow!

Overall Rating: Rated 4.5 out of 5 Stars – A great sweet, sticky sauce with a punch of heat.

Hop on over to http://rooftopbarbeque.com/ and try some of their amazing products! I promise you will not be disappointed!
