Brats and Grilled Veggies on REC TEC Mini Smoker

We grilled some brats and veggies on the REC TEC Mini Pellet Grill recently – and they turned out fantastic!

The key to this success lies in the recipe. The brats were simmered in two bottles of beer and some onions for about 2 hours.

Then we cranked the REC TEC Mini up to 500º and grilled for about 20 minutes.

Don’t overlook the buns – the Johnsonville Sausage Rolls were amazing and helped make this cook a big success.

Country Chef Grilling Sauces on Kickstarter

So I’m doing my first one for Country Chef Grilling Sauces from Chef Mike Espey of North Carolina, because I really believe in the flavors and quality of sauces from him.

What is Kickstarter?

It’s a “crowd funding” website of “projects” for start-up companies (I favor the foodies, BBQ, & hot sauces projects), where you pledge dollars towards their goal, and for pledging you get “rewards”… which depend on the project.

If the project does not meet their goal, you are out nothing – you will not be charged your pledge.

If they do make their goal, you get the rewards for supporting them.

Who or what is Country Chef Grilling Sauce?

Chef Mike Espey created a line of grilling sauces back in 2011, and is now ready to branch out and go nationwide.

True Rules of Grilling

The McCormick Grill Mates Grillerhood on Facebook is compiling a list of “True Rules of Grilling” and here’s where we can be a part of it. That’s you, our readers, and us.

Here is our submission for a True Rule of Grilling:

Always keep a “cold zone” on your grill.

In case of flare-ups, or if you think a meat is cooking too fast, you’ll have a “cold zone” to move the meat to while you make adjustments.

On a charcoal grill, this may involve building your hot fire with most of the coals to the left side for high heat, and some coals in the middle for lower heat, while you have no coals on the right side for the “cold zone”. This technique is also known as a “3 Zone Fire”.

On a gas grill, you can accomplish this by having one burner OFF to create the “cold zone”.

Steakhouse Onion Burgers with Grilled Potatoes

Grill Mates Steakhouse Onion Burgers

Steakhouse Onion Burger Seasoning seasons ground beef and potato wedges with savory garlic and onion flavors.

Prep Time: 15 minutes
Cook Time: 12 minutes

2 medium red potatoes, pierced with fork
2 tablespoons McCormick® Grill Mates® Steakhouse Onion Burger Seasoning, divided
2 teaspoons oil
1 pound ground beef
4 hamburger rolls
Lettuce, tomato and condiments (optional)

1. Microwave potatoes on HIGH 7 minutes or until almost tender, turning potatoes over
halfway through cooking. Let stand 2 minutes. Cut potatoes into wedges. Toss with 1 tablespoon of the Seasoning and oil.

2. Mix ground beef and remaining 1 tablespoon Seasoning in medium bowl until well blended. Shape into 4 patties.

3. Grill burgers over medium heat 4 to 6 minutes per side or until cooked through (internal temperature of 160°F). Grill potato wedges 2 minutes per side or until lightly browned and grill marks appear. Serve burgers on toasted rolls. Garnish with desired toppings and condiments. Serve with potato wedges.
Makes 4 servings.
