Flaming Joes Mild Caribbean Jerk Sauce Review

We have had Flaming Joe’s Jerk Sauce several times over the past year or so, but we were always focused on enjoying the food, but then we finally realized we hadn’t written a review! It’s time to make things right and give Flaming Joe’s Mild Caribbean Jerk Sauce the credit it deserves.

Flaming Joe’s is a multi-award winning company from Geneva, Illinois whose slogan is “Flavor that plays with fire!” Besides the “mild” Caribbean Jerk Sauce reviewed here, they offer a “Hot” version, along with their Island Fire Tropical Fruit & Habanero Marmalade as well as their Strawberry Jalapeño Jam and Hot Buffalo Dust.

Ingredients: key lime juice, soybean oil, soy sauce, green onion, Worcestershire sauce, ginger, habanero pepper, brown sugar, garlic, cilantro, chili powder, spices, xanthan gum, guar gum, sodium alginate

Texture & Appearance: This is a very thick, beautiful sauce. There is no separation when you pour it out on a dish, and the dark color contains bits of herbs that fill out the sauce.

Big Ron’s Hint of Houston Rub Review

We love trying out new rubs that are not found in your local big box grocery store. Small batch or hand crafted seasonings almost always delight us. And sometimes we find a gem. In this case it’s from Houston, Texas in the form of Big Ron’s Rubs.

Big Ron Garcia sent us a sampler pack of four rubs – his Original Rub (all purpose), In the House (chicken & beef), Texas Chili Mix (chili), and Hint of Houston (spicy, chicken).
It’s the Hint of Houston we are focusing on here.

Hogs Breath Blackening Seasoning on Chicken

Marilyn and I were talking about what we like to blacken on the grill. The usual shrimp, steaks and burgers came up… but she suggested Blackened Chicken. What? I admit I never heard of blackening chicken. So I quickly proclaimed “Let me check the Internets about that!”. Lo and behold, there are tons of blackened chicken recipes out there.

Popeyes Wicked Chicken

For a limited time, until the end of June 2010 or while supplies last, you can get an order of Popeye’s Wicked Chicken for only $3.99.
Tender, slender, deliciously breaded strips seasoned especially for Popeyes, comes with one side, a biscuit, and is served with a miniature bottle of Tabasco Sauce – this is good fried chicken and a great deal!

Be sure and try the Cane Sweeeet Iced Tea for 99¢ – it is so much better than McDonald’s.

Why am I posting about Popeyes? Because they contacted us, sent us a few gift certificates, and asked if we would try the Wicked Chicken and write about it. So, my friend, while this is indeed a compensated review, everything we say is our honest opinion. Marilyn and I both sat down to try Popeye’s Wicked Chicken. The restaurant did not know we were reviewing.

The portions:
A generous tray full of small, crispy, Wicked Chicken strips – we counted about 8 or 9 pieces
A fresh, warm biscuit, one side dish – I chose Cajun fries, Marilyn chose red beans and rice


The Wicked Chicken strips:
Marilyn dissected one of the strips and discovered the chicken meat is seasoned and marinated before the breading goes on.
These little strips are much smaller than your standard tenders. It makes them look all the more “Wicked”.
But even though the strips were small, the chicken was very moist and tender.

The Breading:
We were both surprised at how tender yet crunchy the breading was. As you can see it the pics, they look very “craggy” and… well, Wicked! But we found out in talking to the manager that COLD is the keyword of the day. The batter and the chicken MUST be at 40° or less, and the flour freshly sifted. When this combo hits that very hot fryer… you get the results you see in these pics.


The Wicked-ness:
I was disappointed in the heat level of the Wicked Chicken. It was mildly spicy… certainly not wickedly hot. As a matter of fact, we got a regular spicy chicken tender to compare with. Popeye’s calls it “Bona Fide Spicy”, and that was considerably hotter and spicier. Perhaps that is why they include the miniature bottle of Tabasco sauce with the Wicked Chicken.

Note to Popeye’s Corporate Chef: Next time you create a dish called Wicked, make it so! We’re Chileheads after all. Make us hurt! Ok, maybe that’s asking too much from a chain restaurant that needs to cater to the common denominator. 🙂

Note to Popeye’s Management: We dined at Store #4268 and manager Trish Kallenberg and her staff are to be commended for great friendly service, and a remarkably clean dining room.

We really did enjoy the meal, and I mentioned the Cane Sweeeet Iced Tea is spot on. Thankfully the Sweeeet Tea will be available all summer, but the Wicked Chicken only lasts through the end of June.

Get yourself to a Popeye’s near you and enjoy this unique dish while it lasts.

Pickapeppa Jerk Seasoning Chicken Recipe with Bone Suckin BBQ Sauce

Pickapeppa Jerk Seasoning, Bone Suckin BBQ Sauce on chicken legs, done on the grill, and eaten until our eyes rolled back… I can barely write this post. It was that good!

The Big Picture:

We smeared the Pickapeppa Jerk Seasoning onto the chicken, and put them in the Fridge overnight to get all happy. Then we grilled the chicken sloooowly over indirect low heat on the grill. Near the end of grilling, we slathered a bbq sauce made with Bone Suckin’ Sauce and Busha Browne’s Spicy Jerk Sauce to get a nice glaze and to add some sweetness to the mix.

Served with cole slaw and beer… this recipe was truly “food porn” and everyone was happy!

The Details:

We cut up the chicken leg “quarters” into drumsticks and thighs. This was messy and time consuming to me, but Wifey came to the rescue. Personally, I’d be happy buying the chicken
