This salt and pepper based blend includes a nice hit of herbs and spices. We think it really supports and accents the overall flavor experience of the wings with the Louisiana Brand Wing Sauce. Think Zatarain’s or Tony Cachere’s without all of the salt. Savory.

Ingredients: red peppers, vinegar, salt, soybean oil, sugar, xanthan gum, polysorbate 80, citric acid, datem, and natural garlic flavor.

This cayenne based wing sauce is very flavorful. It’s only slightly thick, but is rich in flavor with big hits of cayenne pepper and garlic – two very important flavors for hot wings. Spicy and garlicky.

Final Thoughts: This combo of dry seasoning and sauce make some delicious hot wings. Of the many off the shelf type sauces (grocery store staples), this one comes up a winner and is definitely a top ten sauce found in many grocery stores. Finding the shaker of seasoning might be harder.

The included seasoning takes the overall flavor up a notch, and the wings taste like very authentic wings that we would be happy to have at any bar that features hot wings done with these products. An everyman’s wing.

We are fans of Louisiana Gold Hot Sauce, and Bruce Foods. They have done a great job with this sauce and rub and the kit is a bargain at $2.99 for both.

Murph’s Hot & Spicy Famous Bloody Mary Mix

We loved the original Murph’s Famous Bloody Mary Mix. That 5 Star mixer won the top spot in our Bloody Mary Mix Roundup.

Let’s look at Murph’s new Hot & Spicy version.

Ingredients:water, tomato paste, worcestershire (distilled vinegar, corn syrup, water, salt, garlic powder, spices, tamarind, natural flavor), lemon juice concentrate, horseradish, lime juice concentrate, salt, cayenne pepper sauce (cayenne pepper, vinegar, xanthan gum), celery salt, black pepper, garlic & onion.

Texture: Thick and pulpy. This mixer fills the mouth with a thick, savory flavor and a mouth full of taste. Very satisfying. Standing alone, as a non-alcoholic beverage, it’s delicious.

Taste: The cayenne hot sauce really shines here. Personally, I prefer more horseradish flavor, but the cayenne is a nice change. Many readers and fans of cayenne sauces will love this blend. Spicy is the key word here.

Much spicier than the Original. Therein lies the rub… as much as we like our hot sauces spicy, we prefer our BBQ sauces BBQ-y and our Bloody Mary Mixers – well, bloody. We like them tomato-y with nice spice blends. We would rather add our own horseradish and seasonings to kick things up.

Heat Level: Rated 1.5 out of 5 Stars – Just a notch above mildly spicy, Murph’s Hot & Spicy brings on some heat, but I wouldn’t call it “Hot”. That’s probably a good thing for the general public.

Final Thoughts: Cayenne pepper fans will love this mixer, but we prefer the original Murph’s Famous Bloody Mary Mix over this version.

Kudos to Murph for changing the packaging for both recipes to the nice wide mouth bottle. It’s still a full 1 Liter of mixer, in a better package.

Crystal and Louisiana Brand Wing Sauces

Week of Wings Day 5 has us back in the grocery isle to check out two cayenne based wing sauces from two classic sauce makers: Crystal and Louisiana Brand.

Crystal - Louisiana Wing Sauces

Week of Wings 5 – Day 5. We’re going old school today with two Louisiana hot sauce originals. Both companies launched in the 1920’s and each claim to be “number one” – Louisiana Brand with “Still the Original – the One with the Red Dot” and Crystal proclaiming “#1 Hot Sauce in Louisiana”.

Both have fascinating histories surrounding their hot sauces, but we’re looking at their versions of “original” wing sauces. If this were a “smackdown”, we’ve picked a clear winner. Read on to see which one came out on top.

Preparation: Deep fried. We did our usual 3 step cook – baked at 350º for 40 minutes (turning once half-way through), deep fried at 350 – 375º for 2 – 3 minutes, then tossed in the sauce. See our Wings 101 post for more info.

Crystal Wing Sauce “Original”

Makes a zesty marinade for poultry, seafood, wild game – and fruits and vegetables, too. Those who want their wings extra tasty choose Crystal Wing sauce.

Ingredients: aged red peppers, distilled vinegar, corn syrup, food starch modified, dehydrated garlic and onion, salt, xanthan gum, artificial butter flavoring.

Texture and Appearance: Thin texture and bright orange in color. Tiny flecks of either the peppers or garlic and onion. Marilyn thinks it has the color of Nehi Orange Soda.

Taste straight up: Smooth, buttery, light vinegar taste, but artificial.

Taste on wings: Very little vinegar now, butter taste almost disappears, not much other flavor to speak of. Below average.

Crystal Wing Sauce Wings

Heat Level: ½ Star – Just not there. Plain Jane heat (apologies to our readers named “Jane”).

Overall rating: ½ Star – We not saying this is a bad sauce, but it is so mild and plain, that it just may be the right one for beginners, kids, mothers-in-laws and the like. Hey, you may love this one! If so, tell us in the Comments below.

For now, we’ll pass on this one as a go-to wing sauce. Sorry, Crystal… we had high hopes.

The heat that created the hot wing phenomenon originated in Louisiana, and Louisiana Wing Sauce takes it to the next level.

Ingredients: red peppers, vinegar, salt, soybean oil, sugar, xanthan gum, polysorbate 80, citric acid, datem, natural garlic flavor.

Texture and Appearance: This very dark orange colored sauce clings nicely to the wings. Medium thick.

Taste straight up: Vinegar and cayenne first, a bit salty, but very smooth.

Taste on wings: Great classic buffalo wing taste, a classic. Better than most bar wings. Adding butter is key, flavor is big and satisfying.

Heat Level: Rated 2 out of 5 Stars – Fairly hot, but not a “bring you to your knees” heat… it’s an enjoyable heat. Kudos to Louisiana Brand for nailing a great heat level.

Overall rating: Rated 3.5 out of 5 Stars – Our favorite “buffalo style” grocery bottled sauce of the week. Classic flavor, great heat. Recommended.

SAAS Hot Sauce review

SAAS Hot Sauces are some very unique sauces that fall into the category of “Sauces I’ve Never Heard of But Need to Try!” These are a couple of the most unique hot sauces that we’ve reviewed in a long time. SAAS Hot Sauce (pronounced “Sauce”) also has a great back-story – but more on that later.

SAAS Hot Sauce “the flavor that brings you home“, comes in both Original, and Garlic and Onion flavors – and both are labeled “Hot and Spicy”, which should make some chileheads very happy. They also offer a Mild version, which we did not try.

Ingredients: distilled vinegar (diluted to 4% acidity), cayenne peppers, onions, red habanero peppers, spices, salt, sugar, granulated garlic and molasses.

Texture & Appearance: There’s a lot going on here. The color is a very dark orange and there are lots of pulpy bits with some tiny hulls and seeds. This sauce is thick – not pourable, but very spoon-able. Almost gloppy in thickness (think Heinz Chili Sauce), this is a thick hot sauce!

Taste Straight Up: SAAS Original has a kicked up cajun flavor from the cayenne peppers, with extra heat from the red habaneros. Fans of fiery cajun sauces and cooking will love this sauce. I’ve never been a fan of the straight up cayenne/vinegar/salt sauces, but SAAS brings so much more to the table here, with big flavor and a hint of sweetness from the sugar and molasses.

First up is the vinegar (of course), and just a hint of salt with a bit of sweetness, followed by some nice light onion flavor. Then the heat kicks in. Quickly. It even tastes “dark” like its color. Very flavorful, hot, and savory.

Heat Level:Rated 3.5 out of 5 Stars 3.5/5 – The mix of cayenne and red habaneros really bring on some fiery heat. The heat filled my mouth and lips quickly, but lasted only until I was ready for more – so it’s relatively short-lived.

Label/Graphics: Big letters proclaim “SAAS” (SAUCE), followed by the words “Hot Sauce” and their slogan “The flavor that brings you home“. While I like the simple graphics and label, it really does look very “corporate” – like any other bottle on a shelf at your local grocer. Yet, as a fan of hot sauces, you would be challenged to NOT grab these bottles to bring home and share with the family – “Look at what I found at the store!“.

Overall Rating (Taste on Food, Final Thoughts): Rated 5 out of 5 Stars 5/5 – Our top rating for overall taste, quality of ingredients and packaging. SAAS Hot Sauce has really nailed it in every category. This is not a “try it once” sauce – you will go back to it again and again.

Ingredients: distilled vinegar (diluted to 5% acidity), onions, red habanero peppers, sugar, salt, spices, granulated garlic, honey.

Texture & Appearance: With a much lighter orange color than the Original, there were pools of red that I thought were oil, but are probably the honey. The Onion and Garlic flavor is also much thinner, and therefore more pourable.

There are still some seeds floating about. I’ve talked to many a manufacturer about this issue. Apparently, filtering out the seeds and hulls is an expensive operation that many do not employ for cost reasons. I’m sorry it expensive for them, but I want to go on record as not liking seeds in my sauces.

Taste Straight Up: SAAS Onion and Garlic is not a one-note sauce by any means. This sauce just screams “wing sauce”! Straight up, it tastes, smells and just feels like a wing sauce. An amazing flavor, I just love this stuff. My favorite of the two, by far.

Big onion flavor up front, with a savory and spicy middle taste… the vinegar here is muted slightly by the other spices and flavors. It’s perfect for wings, nachos, pizza… you name it.

Heat Level: Rated 2.5 out of 5 Stars 2.5/5 – A nice, tingly heat – the heat sits nicely on my tongue. Just dancing around the front of my mouth and lips. It’s onions. And garlic. And hot sauce. Get it?

Overall Rating (Taste on Food, Final Thoughts): Rated 5 out of 5 Stars 5/5 – Since I’m a sucker for good garlic based sauces, and the onion is a bonus, this sauce gets our highest rating.

Both of these sauces made for some delicious and fiery wings! I did a batch with just the sauce and with sauce and butter (2:1 sauce to butter ratio).

I had a very nice chat on the phone with Mia Rebel, one of the creators of SAAS, and she kindly told me of the beginnings of the SAAS story. Originating in Africa and India, the SAAS hot sauce story made its way to America where a group of students at the Earth Center Schools got serious about making the sauce as a way to help raise funds. The elephant in the logo is an homage to their beginnings – the elephant was ever-present in their surroundings.

In 2008, a team of students were brainstorming to come up with ideas on how to make money for good causes. The primary focus was to generate money in order to help protect traditional culture worldwide. The group of students had a variety of skills between them, and it just so happened that one of them was a sauce chef. They decided to use his zest for sauce making, and in a collective effort, designed this delicious sauce for the benefit of humanity and the earth. That is the story of SAAS “Original Flavor”.

These students, from the Earth Center Schools, developed the original SAAS Hot Sauce, and later the SAAS Onion & Garlic Hot Sauce, and finally the Mild flavor.

In 2010, two musicians combined their skills in order to write a variety of musical compositions. While promoting an onion festival in the southern US, they designed an onion flavored hot sauce that would be perfect for families and cook-outs. One of those musicians happened to be part of the team of students that founded SAAS “Original Flavor”! Shortly after, this new delicious onion sauce joined together with SAAS “Original Flavor” in the effort to benefit humanity and the earth. That is the story of SAAS “Onion & Garlic”.

The Earth Center of Maanu Inc., is a non-profit grassroots organization, dedicated to preserving indigenous culture worldwide. This “Quick Pick” is from South Carolina – a super-thick hot sauce featuring cayenne and serrano peppers.

Paul Eubanks, a member of the Hot Sauce+ Community on Google+, reached out to us about his Phoenix and Peaches ‘n Heat sauces. They looked good, and a few bucks later, we had a couple of bottles here to play with. Originally launched on Etsy.com (and some are still available as of this writing), Paul is now taking orders for these big 8 ounce bottles on his site, http://pabloshotsauce.com.

Why this is a Quick Pick:

Because of its unique and pungent flavor, and super-thick consistency. Serrano peppers are a favorite here at HotSauceDaily, and when added to the everyday cayenne chile pepper, a new burst of flavor is the result. Phoenix almost tastes like a sun-drenched exotic chile pepper sauce from another land.

Ingredients: aged cayenne and serrano peppers, salt, vinegar, lime, spices

Overall impression: Brings some pizzaz to pizza and makes a nice dipping hot sauce for just about anything from snacks (pizza rolls and pretzels) to wings.

Pros: Simple ingredients, simple label and graphics – great “small crafted” look and feel. Big flavor.

Cons: Lime ingredient may not be fresh lime juice – something is just a bit off-putting about the citrus, although Pablo’s claims to use only fresh ingredients.
