BBQ Bob’s Hav’n A BBQ Sauce

We ran into our friend, Bob Trudnak from The BBQ Guru, at a recent BBQ competition in Harrington, Delaware. Bob was selling his newest “BBQ Guru” product – and this one uses no wires or batteries. It’s…

BBQ Bob’s Hav’n A BBQ Sauce

bbq-bobs-bottle

This BBQ sauce is a great balance of sweet and tangy with presence of fresh herbs, spices and a slight vinegar finish. Appeals to all ages from 2 to 102. Especially great on chicken, ribs, burgers, brats and all pork cuts.

“All pork cuts”? That’s good to know, as our first taste test with BBQ Bob’s is on pork skewers. But first, let’s look at the sauce up close.

Ingredients: Cider vinegar, tomato concentrate, vinegar, agave syrup, light brown sugar, water, sugar, vine ripened red tomatoes, high fructose corn syrup, corn syrup, salt, oleoresin paprika, liquid smoke, spice, onion powder pepper, granulated garlic, caramel color, worcestershire seasoning, citric acid, cayenne pepper, natural flavoring, dextrose, oleoresin capsicum, sulfur dioxide.

Texture & Appearance: A reddish brown color is flecked with spices and seasonings. Black pepper flecks are prominent too. The sauce is also shiny and relatively thin in consistency – more of a corn syrup texture. Glossy.

Taste Straight Up: A silky coating on the tongue and mouth leads us into a classy sauce – there’s some pleasant black pepper spice or “heat” if you will. But overall, the sweetness from the syrups really carries the biggest flavor. A very light vinegar finish comes at the end. Let’s see how it tastes after we cook or grill with the sauce. Classic.

Packaging: A big 19 ounce glass bottle contains the sauce. The label and graphics are simple in colors and a cartoony pig adorns the label. The word “Original” is also prominent – is there another flavor to come? Nice layout.

We’re brushing BBQ Bob’s Hav’n a BBQ sauce onto some pork skewers as they cook over direct heat on the grill. And for fun, we skewered some pineapple chunks and brushed BBQ Bob’s on them as well.

Marilyn: There’s just a hint of a vinegar edge to the flavor of the sauce on the pork skewers. It’s a subtle sauce – not overpowering at all. A lot of the sweetness has cooked out and we’re left with a smoky and sticky coating.

I think this sauce would fare better on a fattier piece of meat – whether that be pulled pork, or even some chicken parts.

Marilyn’s rating: On our scale of 1 – 5, I would give this Rated 2.5 out of 5 Stars – it’s a pleasant enough sauce, but nothing spectacular.

Brian: I’m disappointed in how much this sauce “broke down” after cooking. It’s just a thin glimmer of what it started out to be. This is not a thick, gloppy sauce – especially after cooking.

Maybe it would make a great base to add to – to make it your own flavored sauce. Doctor it up a bit with either spices or other flavorings – chiles, or fruits would fit nicely here.

Brian’s rating: Rated 1 out of 5 Stars – 1/5 Stars from me. Perfect for a tame, mild bbq sauce. If this were the 1960’s, I could see this sauce on every red plaid tablecloth in the backyard.

Our final thoughts:

This sauce is of the highest quality in overall taste and makeup. It is truly much better than any you’d find on the grocery shelf. It’s just a bit tame, timid and mild for our tastes. We like a bolder sauce, in both texture, taste, and overall flavor hit.

Deaf Man’s BBQ Sauce: Blend and Mango Blend

May is National Bike Month, National Pregnancy Awareness Month (wha?), and in some circles it’s also National Shoe Month.

But what we’re really into this month is National Barbecue Month! Oh yeah.

That means it’s also BBQ Sauce Reviews Month at HotSauceDaily.com. First up is…

Deaf Man’s BBQ Sauce

slide_8

Deaf Man’s BBQ Sauce is the brainchild of Rasool Raheem of Los Angeles, CA. Rasool is indeed deaf, a chef, and a bbq sauce crafter.

Deaf Man’s BLEND BBQ Sauce, and MANGO BLEND BBQ Sauce are just two of the seven (7) flavors of BBQ sauces he’s crafted so far.

Deaf Man’s BLEND BBQ Sauce

On their website, they call this Honey Mustard Blend. “A combination of sweet and spicy accents with a hint of mustard makes a mouth-watering blend so versatile you’ll want to put it on everything!”

Deaf Man's Mustard Blend BBQ Sauce

Deaf Man’s Mustard Blend BBQ Sauce

Ingredients: tomato concentrate, honey, sugar, molasses, vinegar, HFC, corn syrup, water, contains less than 2% of the following: habanero, salt, anchovies, garlic, onion, hydrolyzed soy protein, tamarind, spices, mustard seed, turmeric, black pepper, natural flavors, natural hickory smoke flavor, guar gum, dextrine, citric acid, potassium sorbate (preservative), caramel color, sulfites (to retain color).

Marilyn: This is not a mild BBQ sauce at all. The texture is nice and silky and the first impression is of sweetness from the honey. The vinegar is in the background, which I like, but the habanero gives it too much sting for my taste.

My overall rating would be Rated 2 out of 5 Stars – I love the texture, but the flavor is not too different from other BBQ sauces I’ve had, and the habanero just bites too hard, even after cooking.

Brian: This is a thick sauce that clings nicely. It’s indeed peppery and pretty spicy… if this is indeed Deaf Man’s “mild” sauce… it has a kick. I think it would work better as a wing sauce.

My overall rating would also be Rated 2 out of 5 Stars – Two stars for a good start. Pretty spicy for the bottom of the line up. But not a bad start.

Deaf Man’s MANGO BLEND BBQ Sauce

“Mango with a hint of mustard makes this sauce unique. The flavor of fresh mango in each bottle and a little extra heat to add to your plate. Use it on everything. The longer the sauce sits, the hotter it gets!!!”

Deaf Man's Mango Blend BBQ Sauce

Deaf Man’s Mango Blend BBQ Sauce

Ingredients: tomato concentrate, mango nectar (water mango puree, citric acid, natural flavor, ascorbic acid), honey, brown sugar, molasses, vinegar, hfc, corn syrup, soy sauce (water, rice, soy bean, salt), contains 2% of garlic, onion, habanero, salt, spices including: mustard, turmeric), water, anchovies, natural hickory.

Deaf Man's Mango Blend on Chicken Skewers and pineapple rings

Deaf Man’s Mango Blend on Chicken Skewers and pineapple rings

Marilyn: I think this sauce coats very well on the skewers. The extra sweetness from the Mango adds a welcome flavor and stickiness to the chicken, and it’s perfect on the pineapple slices.

Overall rating: Rated 3 out of 5 Stars – A step up from the “Blend” sauce. My favorite of the two.

Brian: Great cling factor on the skewers with a nice added sweetness from the mango. A step up from the “Blend” – I agree.

My overall rating: Rated 3 out of 5 Stars – I agree with Marilyn. (Don’t tell her.) Wonderful sauce that does its job well.

There are actually a few reasons why the sauce was named Deaf Man’s BBQ—the most obvious of which we’ve already covered. Though by that same logic, it could have been called “Snappy Dresser’s BBQ Sauce” or “Excellent Bowler’s BBQ Sauce.” The other thing that convinced Rasool to name it Deaf Man’s BBQ Sauce was because he knew that anyone serving the sauce to family or friends would know what it’s like to be deaf: In those moments between the first bites and the roars of delight, there is absolute silence.
The sauce is that good.

Rasool is also looking to sponsor BBQ Competition Teams to use his sauces. Contact him here: http://www.dmbbq.com/contact-form/index.php

Country Chef Grilling Sauces on Kickstarter

I’m a big fan of Kickstarter projects (I’ve backed over 30), but I’ve never featured one in a post on HotSauceDaily.

[vision_notification style=”warning” font_size=”14px” closeable=”false”] UPDATE 04/08/2014: Sadly, the Kickstarter campaign has been cancelled. Hopefully, Chef Mike will re-tool and do another one. In the meantime, there is still a lot of juicy good info in this post. [/vision_notification]

Country Chef Grilling Sauces on Kickstarter

So I’m doing my first one for Country Chef Grilling Sauces from Chef Mike Espey of North Carolina, because I really believe in the flavors and quality of sauces from him.

What is Kickstarter?

It’s a “crowd funding” website of “projects” for start-up companies (I favor the foodies, BBQ, & hot sauces projects), where you pledge dollars towards their goal, and for pledging you get “rewards”… which depend on the project.

If the project does not meet their goal, you are out nothing – you will not be charged your pledge.

If they do make their goal, you get the rewards for supporting them.

Who or what is Country Chef Grilling Sauce?

Chef Mike Espey created a line of grilling sauces back in 2011, and is now ready to branch out and go nationwide.

I’ve been a fan of Chef Mike Espey’s since 2011, where we first reviewed his Mustard Grilling Sauce. His lineup has grown to six flavors of grilling sauces – Original, Hickory Smoke, Honey, Mustard, Chipotle & Sweet & Spicy.

How can you help?

So I’m asking our readers to visit the Kickstarter page for Country Chef Grilling Sauces and make a pledge.

You can make a pledge as little as $1 (One dollar) and up. Payments are handled easily via Amazon payments.

You can go here to make a pledge for Country Chef Grilling Sauces on Kickstarter: https://www.kickstarter.com/projects/494646113/country-chef-grilling-sauce

Here’s a video we made a little while back grilling some wings with Country Chef’s Mustard Sauce:

Good luck to Chef Mike and Country Chef Grilling Sauce!

Jerk BBQ Wings with Hoboken Eddie’s

Day 6 of our Week of Wings features a Caribbean Jerk BBQ sauce from Hoboken Eddies.

Jerk Wings with Hoboken Eddie’s Jamican Jerk BBQ Sauce

hoboken eddies jamaican jerk bbq wings 01

Week of Wings 5 – Day 6. I love jerk seasonings and jerk sauces, and so I usually include them in our Week of Wings series. This one is a little different in that it’s not your typical jerk sauce. Hoboken Eddie’s Jamaican Jerk BBQ is more of a thick, barbecue style sauce with jerk overtones. It made some hot, spicy wings.

Preparation: Deep fried. We did our usual 3 step cook – baked at 350º for 40 minutes (turning once half-way through), deep fried at 350 – 375º for 2 – 3 minutes, then tossed in the sauce. See our Wings 101 post for more info.

Ingredients: relish, apricot jam, jalapeño peppers, ketchup, hot sauce, vinegar, brown sugar, molasses, chopped cherry peppers, worcestershire sauce, tomato paste, ginger, water, liquid smoke, allspice, cinnamon, curry powder, chives.

hoboken eddies jamaican jerk bbq texture

Texture and Appearance: Dark reddish brown in color, this jerk bbq sauce is very thick and super chunky, thanks to the first ingredient of relish.
It coated our wings well, and the bits of relish and peppers added some nice texture. Beautiful.

Taste straight up: First up, you know you’re eating a smoky tomatoey BBQ sauce. A fruity sweetness and spice are next, with some considerable heat coming in last.
It’s a pleasant taste overall, and the tiny chunks add to the mouth feel. Sweet and spicy.

hoboken eddies jamaican jerk bbq wings 02

Taste on wings: Sweet and flavorful, this sauce is hard to characterize. The Jamaican Jerk BBQ influence is there, but in a light-weight amount. Ginger, cinnamon and garlic play a big role in that.

Marilyn tasted a heavy roasted veggies profile that she found delicious. Also, she is not a fan of jerk sauces, but thoroughly enjoyed this sauce on our wings, and looks forward to trying it on some ribs.

I find it very fruity, without being too sweet – a nice complex balance of flavors. I think of it as “Americanized Jerk”, as it really is a BBQ sauce first. And the smokiness was muted in the end. Very unique.

Heat Level: Rated 2 out of 5 Stars – I know we’re only talking about jalapeños and cherry peppers here, but this sauce brings on a good amount of heat. Our lips were tingling, and the burn fills the mouth and throat. It’s not exactly short-lived either. Warm.

hoboken eddies jamaican jerk bbq bottle

Overall rating: Rated 3.5 out of 5 Stars – Our most unusual wings of the series this week. Jamaican Jerk BBQ Sauce from Hoboken Eddie’s is a fantastic sauce with so many possibilities, from burgers, to ribs, to pork and chicken.

I don’t want to forget to mention the awesome 14 ounce “flask” bottle is a hefty and attractive package.
