Sriracha Week 2016 – Garlic Sriracha Wings

It’s National Sriracha Sauce Week! Here’s our to-die-for Sriracha Garlic Wings recipe. Sriracha sauce, crispy chicken wings, and tons of garlic make these hot and savory wings the *best* chicken wings we’ve ever cooked!

Sriracha Garlic Wings Recipe

Sriracha garlic wings.
The wings are first marinated, then baked for 20-30 minutes before being deep fried to crisp them up. Then, you toss them in the Sriracha, butter, cilantro, garlic and lime sauce before serving. Yum!!!
We’ll repeat the recipe at the end of this post.

The basics:

  • 4 pounds chicken wings, cut up (serves 4)
  • 1-2 quarts vegetable oil for deep-frying

For the marinade:

  • 1/8 cup ground coriander (2 Tbs)
  • 1/2 tsp ground cumin
  • 1 Tbs kosher salt
  • 1/8 cup extra-virgin olive oil(2 Tbs)

Step 1. In a large zip-lock bag, as seen above, combine coriander, cumin, salt and olive oil. Toss in the wings and massage the bag to coat. Refrigerate at least 4 hours, or overnight. Though the volume of the marinade seems small and barely coats the wings, it is critical to the success of this recipe.

Step 2.Preheat oven to 375 degrees. Place wings in a single layer on a large, rimmed baking sheet covered with parchment paper. Bake for about 30 minutes, until wings are firm, but not done. (They’ll finish cooking in the deep-fryer). Remove them from the oven and place on a platter to dry before frying.

For the sauce:

  • 1/2 cup Hot Sriracha chili sauce (or to taste)
  • 3/4 stick (6 tbl) unsalted butter, melted
  • 1/4 cup chopped cilantro
  • finely grated zest and juice of 1 lime
  • 4 large cloves garlic, minced

Step 3. In a clean bowl, blend cilantro, minced garlic, lime zest and juice, and melted butter. Add 1/2 cup Sriracha Hot Chili Sauce, combine and set aside

Step 4.Working in small batches, deep-fry wings until crispy and browned, 2-4 min. Drain briefly on paper towels, then toss the hot wings in the sauce. Let the wings sit for 2-5 minutes before serving so the flavors soak into the wings.

Step 5.Serve hot, on a platter with your favorite side dishes.

Nashville Hot Chicken from KFC

Nashville Hot Chicken has been on our radar for a while now, and we considered recreating the recipe to try at home, but KFC has taken care of it for us. Thank you Colonel Sanders Inc.

While not exactly “hot wings”, we’re including this unique chicken in our Week of Wings 7 – Day 4. It’s a shame KFC doesn’t offer their Nashville Hot Chicken in a “wing only” version.

We don’t often post about fast foods – our friend “Q” over at BrandEating.com does an awesome job of those reviews – but we just had to share this with our readers.

Quick backstory about the recipe: Nashville Hot Chicken originated in the 1930’s at Prince’s Hot Chicken Shack in Nashville, Tennessee.

Hot chicken or Nashville hot chicken is a type of fried chicken that is a local specialty of Nashville, Tennessee, in the United States. In its typical preparation, it is a portion of breast, thigh, or wing that has been marinated in a water-based blend of seasoning, floured, fried, and finally sauced using a paste that has been spiced with cayenne pepper. It is served atop slices of white bread with pickle chips. It is both the application of a spicy paste and the presentation that differentiates it from similar dishes, such as Buffalo wings. Our thoughts on the KFC Nashville Hot Chicken:

We’ll keep this short and sweet spicy.

This is some of the best spicy chicken we’ve ever had. Without a doubt. Bar none. Period.
Ok, you get the idea. We like it.

KFC’s Nashville Hot Chicken sauce is a super spicy oil based mixture

Remarkably, KFC’s original Extra Crispy Chicken stays… well, extra crispy – even after being doused with the spicy oil. It must be science!

How it’s made – (the unofficial secret recipe):

1. Take KFC Extra Crispy Chicken parts (or tenders for you tenderfoots)
2. Douse them with a spicy oil laced with cayenne powder, chili powder, brown sugar, garlic, salt and pepper
3. Do this all over the parts again
4. Toss on a couple of dill pickle chips just for fun (and faux authenticity)
5. Bam! You’re in Nashville, eating Hot Chicken – or as close as you’ll get

KFC Nashville Hot Chicken

We purchased the 8 piece Family Meal, that included 2 breasts, 2 thighs, 2 legs, and 2 wings – along with 2 sides.

Heat Level: Rated 3.5 out of 5 Stars – Very spicy! Hot.

Overall Flavor: Rated 4 out of 5 Stars – Best spicy chicken we’ve had from a fast food joint. Unique and savory!

Enjoy with KFC’s really decent cole slaw and a good cola. Oh, and biscuits.

Seriously, we think this offering trumps the best of what Popeye’s has ever offered.

And so, on Day 3 we’re looking at Moore’s again, but this time it’s their creamy wing sauces.

Very strong blue cheese flavor without the heat of traditional Buffalo wing sauce. This sauce is creamy, thick and rich, and is an amazing addition to your platter of wings for the “mild” lovers of wings.

A nice balance of flavor without the heavy hot sauce or heavy vinegar flavors.

Heat Level: Rated 1 out of 5 Stars – Almost no heat. Super mild.

Overall flavor: Rated 5 out of 5 Stars – You don’t find a blue cheese wing sauce with this much flavor very often. Delicious!

Moore’s Creamy Ranch Buffalo Wing Sauce

We’re in the uber-mild side of sauces here, but very delicious too. If you are a Ranch Sauce fan, this wing sauce will not disappoint! And your family will love it too.

This thick, pleasant tasting sauce would suit any gathering – football, baseball, family picnics… bring it and they will eat it!

They’re like mild buffalo wings with Ranch dip built in. They have a true Ranch dip flavor!

Overall flavor: Rated 4 out of 5 Stars – Good for all occasions! Satisfying.

– 1 stick (8 T) unsalted butter

Melt butter in bowl, add Old Bay Seasoning, toss hot fried wings in butter / Old Bay mixture to coat.

These wings are silky, crispy, buttery, savory and delicious. They are unique and delicious wings that everyone at your party will devour!
